Ingredients


  • 4 bone-in pork chops (about 1 inch thick)

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 1 tsp garlic powder

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 head of cauliflower, cut into florets

  • 3 tbsp butter

  • 1/4 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • Optional: Fresh parsley for garnish


Cooking Instructions


Prepare the Pork Chops:

  1. Preheat your oven to 375°F (190°C).

  2. Pat the pork chops dry with paper towels. In a small bowl, mix 1 teaspoon each of garlic powder, dried thyme, and dried rosemary, along with salt and pepper to taste.

  3. Rub the seasoning mixture all over the pork chops.


Sear the Pork Chops:

  1. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.

  2. Add the pork chops to the skillet and sear for 2-3 minutes on each side, until they are nicely browned.


Bake the Pork Chops:

  1. Transfer the skillet with the seared pork chops to the preheated oven.

  2. Bake for about 15-20 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).

  3. Remove the pork chops from the oven and let them rest for 5 minutes before serving.


Prepare the Cauliflower Mash:

  1. While the pork chops are baking, bring a large pot of water to a boil.

  2. Add the cauliflower florets and cook for about 10 minutes, or until they are tender.

  3. Drain the cauliflower and transfer it to a food processor or blender.

  4. Add 3 tablespoons of butter, 1/4 cup of heavy cream, 1/4 cup of grated Parmesan cheese, and the minced garlic to the food processor.

  5. Blend until the cauliflower is smooth and creamy. Season with salt and pepper to taste.


Serve:

  1. Place a generous scoop of cauliflower mash on each plate. 

  2. Top with a pork chop. Garnish with fresh parsley if desired.

  • Ensure the pork chops are of even thickness for consistent cooking, and use a meat thermometer to prevent overcooking.


  • For a lower-fat option, substitute heavy cream with milk and reduce the amount of butter in the cauliflower mash.


  • Experiment with different seasoning combinations on the pork chops, such as a garlic-herb blend, Cajun spices, or a homemade dry rub.


  • If desired, add a side of steamed or roasted vegetables for extra nutrients and visual appeal.
