Colorful vegetables like bell peppers, zucchini, and red onions are rich in vitamins, minerals, and antioxidants for immune support and overall well-being.
This recipe is vegetarian-friendly and can easily be made gluten-free by using gluten-free soy sauce.
Ingredients
8 skewers (if wooden, soak in water for 30 minutes before using)
8 ounces Halloumi cheese, cut into 1-inch cubes
2 bell peppers (any color), cut into 1-inch pieces
1 zucchini, sliced into 1/2-inch rounds
1 red onion, cut into 1-inch pieces
1/4 cup olive oil
1/4 cup soy sauce (or gluten-free tamari)
2 cloves garlic, minced
2 teaspoons honey
1 teaspoon dried oregano
Salt and black pepper, to taste
Cooking Instructions
Preheat the grill to medium heat
In a large bowl, whisk together olive oil, soy sauce, garlic, honey, oregano, salt, and black pepper.
Add the Halloumi cheese, bell peppers, zucchini, and red onion to the marinade, gently tossing to coat evenly. Let marinate for 10 minutes.
Thread the marinated Halloumi and vegetables onto the skewers, alternating the ingredients.
Grill the skewers for 10-15 minutes, turning occasionally, until the vegetables are tender and lightly charred, and the Halloumi is golden brown.
Serving Suggestions
Serve the skewers with a side of rice, couscous, or a fresh green salad.
Drizzle with a tangy yogurt sauce or tzatziki for added flavor and creaminess.
Enjoy with a glass of chilled white wine or lemonade for a refreshing summer meal.
Cooking Tips
To prevent sticking, brush the grill grates with oil before adding the skewers.
If you don't have access to a grill, you can also cook the skewers under a broiler or in a grill pan on the stovetop.
Feel free to customize the recipe with your favorite vegetables or seasonings.
