Ingredients


  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

  • 1 cup pineapple chunks

  • 1 red bell pepper, cut into 1-inch pieces

  • ¼ cup soy sauce

  • ¼ cup pineapple juice

  • 2 tablespoons brown sugar

  • 2 cloves garlic, minced

  • 1 teaspoon ground ginger

  • Salt and pepper, to taste


Cooking Instructions


  1. In a medium mixing bowl, whisk together the soy sauce, pineapple juice, brown sugar, minced garlic, ground ginger, salt, and pepper.


  2. Place the chicken pieces in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Refrigerate for 1-2 hours.


  3. Preheat the grill to medium heat (about 350°F/175°C). If using wooden skewers, soak them in water for 10-15 minutes before grilling to prevent burning.


  4. Thread the marinated chicken, pineapple, red bell pepper, and red onion pieces onto the skewers, alternating ingredients as desired.
