Ingredients


  • 2 cups raw almonds

  • 1 tsp vanilla extract

  • 1/4 cup dark chocolate chips (at least 70% cacao)


Instructions


  1. In a food processor, pulse the almonds until finely ground.


  2. Add the dates, cocoa powder, coconut, maple syrup, and vanilla extract to the food processor. Pulse until the mixture starts to form a sticky dough.


  3. Fold in the dark chocolate chips by hand or using a spatula.


  4. Roll the dough into 20 equal-sized balls, approximately 1 inch in diameter.


  5. Chill the energy bites in the refrigerator for at least 30 minutes before serving.


Tips


  • For a nut-free version, replace almonds with sunflower seeds or pumpkin seeds.
